Best ever chocolate brownies

There’s no shame in finding happiness in the small things and these pages will be all about the lighter side of life!

And happiness can definitely be found in one of the world’s most delicious chocolate brownies.

Meanwhile enjoy these – they are foolproof (my 5 & 8 year old can make them!) and they are delicous:

200g dark chocolate – chopped up
130g plain flour
3 eggs – whisked
175g butter (unsalted is best, but salted will do)
325g caster sugar

Icing sugar to sprinkle on top

A tin that is approximately 30 cm wide x 20 – 25 cm wide and at least 5cms deep. Paint it with butter and if you have it (less cleaning) line it with baking paper.

Put the over on to 325 F, 170 C or gas mark 3

Melt the chocolate and butter in a big bowl (big enough for the other ingredients to be added to it) in the microwave. Use short bursts of about 1 min (then 30) seconds and take it out and stir it in between. This stops the chocolate burning.

Add the sugar and stir well. Add the flour and stir well. Add the eggs and stir until you have a thick and gloopy mixture.

Pour or spoon the mixture into your tin and cook (in the middle of the oven, so you can see the top of the brownies) for about 30 mins, or until the top goes flaky. Don’t worry about opening the oven towards the end of the cooking to check. Above all be careful not to overcook the brownies as they will become hard and crunchy. And remember – no one ever complains about a gooey brownie!

Take them out of the oven (and if you can bear too) leave the to cool completely before sprinkling with icing sugar and chopping up (12 huge pieces, and about 25 small bites) .

If not, wait a while as they can be scalding inside when they first come out of the oven, and then enjoy warm!
